NEW!! EXCITING!! Addition to the Range - Jerk it up HOT Sauce!!

élan's Caribbean Flavours is excited to announce the addition to the the range - "Jerk it up" Hot Sauce! This sauce was inspired by the Jamaican jerk style of cooking fragrant, tasty and 'spicy' foods.

Modern cooks like to use the Jamaican known "jerk" for freshly served barbecued meats, pork, poultry and fish. 

THIS sauce is a HOT, spicy, mouthful of INTENSE flavours blended together by the Caribbean spices and "Hotness" from the Jamaican Scotch Bonnet Pepper.

It is ideal as a wet marinade pre cooking or as a hot sauce post cooking to add that incredible JERKED right up Hotness!!

Thank You Williams-Sonoma!

On Saturday élan's Caribbean Flavours had an AMAZING day of tastings at the Williams-Sonoma Bondi Junction Store. There was yummy food, great customers and lots of spicy flavours.Thank you to ALL the team in the store but a special thank you to Jonas (in my pic) my on the ball, super efficient assistant for the day!! Looking forward to doing ALL again very soon!!

CONGRATULATIONS!!!

We are so excited to share the amazing news that all three sauces are now proud winners of Fine Food medals from both the Royal Melbourne Fine Food Awards and The Sydney Royal Fine Food Show 2014.

In Melbourne the calypso pepper jam took out a Silver Medal along with the Feeling hot hot Peppersauce while the reggae tamarind barbecue sauce won a Bronze!

In Sydney, the calypso pepper jam represented the Caribbean flavours and won a Silver medal!!

A customers GREAT recipe idea with reggae tamarind sauce- please keep the ideas coming!

Rocking Reggae Beef with Cool Coconut Rice and RawliciousVegetable

 
Place 500gms of stir fry beef strips into a lidded container. Pour enough élan's Reggae Tamarind Barbecue Sauce to cover the strips. Put a lid on it and put it in the fridge overnight. After a number of hours, though, flip the container over and give it a bit of a shake, so everything is truly coated.

Make coconut rice according to which ever recipe you like the most. I chose one that had Jasmine rice, Coconut Milk and water, cooked by the absorption method.

Place the marinated beef strips in a hot saucepan, and cook until the beef is cooked! Putting a lid on the saucepan traps the heat and moisture. Whilst this is cooking, tend to your vegetables. I grated a carrot, finely sliced green beans on the diagonal (for the aesthetics) and diced some button mushrooms.

Assemble it so it looks as awesome as it tastes - place the rice on a plate or in a shallow bowl. Put some of the beef on the pile of rice. Top off the beef with your raw vegetables.
Have a glass of water beside you whilst you eat it, and a serviette to clean up your drool - but nothing will wipe the smile off your face after your eat élans Reggae Tamarind Barbecue Sauce :)

Election Day Market

WOW!! What an amazing response to our first ever market!! Election Day at Double BAy Public School was and GREAT success!!

Recipes

Pork Ribs With Tamarind Barbecue Sauce

Pork ribs are grilled with a tangy sauce made with élans caribbean flavours reggae tamarind barbecue sauce.

Ingredients

2 tablespoons chopped white or yellow onion
4 garlic cloves, chopped
2 cups tamarind pulp (tamarind paste)
1/2 cup honey
1/4 cup brown sugar
4 tablespoons soy sauce
1/4 cup cider vinegar
hot sauce to taste

 

Instructions

In a casserole with 1 tablespoon of oil cook the onion and garlic over medium heat until golden.

Add the rest of the ingredients except ribs and simmer gently until the sauce is thick.  Correct seasoning with salt, pepper, vinegar or hot sauce.  Cool and puree in blender.  Refrigerate.

Season the ribs generously with salt and pepper, and over a low fire, barbecue slowly, turning periodically, until crispy on the outside, but still juicy on the inside.  Just before serving, remove the ribs form the fire and brush generously with barbecue sauce and return to the fire.  Turn over a few times applying more barbecue sauce to make sure they are well coated and cooked until the sauce is caramelized and looks like a glaze.

The barbecue sauce also works well with beef or chicken.
